There are a lot of good books. Besides Al's, I would recommend "Arming and Equipping the US Cavalry 1865-1902" by Dusan Farrington, "Rifles of the US Army" by John McAulay, "The US Army in the West 1870-1880" by Doug McChristian, and - while somewhat dry, and expensive - the Annual Reports of the Chief of Ordnance for the period 1865-1895.
