How do the experts on this board view armory rebuilt trapdoor rifles and carbines that have "starred" serial numbers?

I've seen a couple that I'm interested in but don't know how their "rebuilt" status affects value. Are they considered unique or rare? Or are they considered less than an original and correct gun?

Other than receiver/breech block, rear sight, and stock (with new date cartouche), is there any way to tell what other parts have been replaced?
